My family loves steak. I’ll never forget the first time my son had steak. It was New Year’s Eve, we were visiting my family on the East coast, and he had turned one a month earlier. Sitting around the dining room table, he looked at our plates, ignoring his own dinner of ground beef and peas (we had tried cut up meat before but he hadn’t been interested, instead preferring ground meats). He started vigorously pointing to the plate of steaks, almost launching himself out of his seat in the process (thank goodness he was strapped in), so my husband and I looked at each other and said “Guess he wants some steak!”
We cut up a few small pieces and put them on his tray. He downed them like there was no tomorrow and repeatedly made the baby sign language sign for “more”. Long story short, he ended up eating as much steak that evening as his father, who has a very healthy appetite. Everyone around the table was quite astounded at the amount of steak consumed.
While our steaks were grilling, I prepped the extra virgin olive oil, garlic, and rosemary. Once the steaks were done and resting, I turned the heat on for the rosemary-garlic oil. What a wonderful smell as the rosemary and garlic started to release their scent and flavor — my mouth started to water.
Once ready, I coated in the steaks in the rosemary-garlic oil and then called everyone to dinner. There were no empty plates at the end of dinner that night!
